The juice obtained using a whole bunch press is clarified overnight at low temperature, and the lees are removed the next day to obtain the clean juice that is used.
The aroma derived from fermentation was carefully extracted to create a refreshing and aromatic wine.

It had long been said that it was "not suitable for this region," but after 20 years of trial and error, it was commercialized as a single-variety wine in 2021.

This red wine can be enjoyed by people who usually drink white wine but not so much red wine, or those who don't like the strong tannins typical of red wine. The unique aroma, mild acidity, and tannins of Izu Merlot, which are not found in Merlots produced overseas, make it a great choice for people of all ages and genders, even those trying red wine for the first time.
