How to read a wine lineup chart

The chart is divided into two categories: " sweet vs. dry " and " light-bodied vs. full-bodied ." We will explain the characteristics and philosophy behind our wines for each category.

1. Sweet vs. Dry: What's your preferred level of sweetness?






Sweet and dry

This axis indicates the sweetness of the wine .

  • Sweet : A rich sweetness spreads throughout the mouth and continues to the finish . "Izu Extra Sweet" and "Sparkling Wine Sweet," which are at the sweetest end of the chart, have a distinct sweetness.

  • Neutral : The middle of the chart represents a neutral position, meaning that the sweetness is moderate (hardly noticeable) . There is almost no sweetness in terms of sugar content, and the impression is refreshing.

  • Dry : A dry wine. Rather than being "dry," it has a nuance of being " crisp " or " clean in the mouth ." It may also have a refreshing, light, dry feeling in the mouth after drinking.

Trivia: The sweetness of wine comes not only from the sugars derived from the grapes, but can also be felt from the alcohol, especially in wines with a high alcohol content. Surprisingly, many of our wines are dry and not "sweet," falling in the middle of this range, making them easy to pair with food.

2. Light-bodied vs. Full-bodied: What is your preferred drinking texture?

This axis indicates the strength, weight, and mouthfeel of the wine , including what sommeliers call " texture ," the way it feels in the mouth.

  • Light body : Light and easy to drink.

  • Full-bodied : A full-bodied wine with a rich, satisfying taste. It tends to have a complex flavor with strong elements felt in the mouth, such as astringency and acidity.

Examples of our wines : White wines are generally perceived as being on the lighter side, but " Izu Chardonnay Premium " is unusually full-bodied among white wines, thanks to the balance of flavor from barrel aging, the rich flavor derived from the grapes, and the acidity. Since we evaluate the balance of acidity and the overall flavor, rather than just the strength of the barrel, we recommend it to those looking for a satisfying white wine.

Sweet and dry

Red wines tend to be fuller-bodied than white wines, due to the astringency derived from tannins and the flavors of barrel aging. However, this year's " Chateau TS Dry Red " uses 40% Muscat Bailey A and is fermented gently over a long period of time at low temperatures, resulting in a clear color and soft astringency. As a result, despite being a red wine, it is on the lighter side. This is a wine that is easy to try even for those who don't usually drink much red wine.
