Commitment to traditional brewing methods
1. Fermentation with natural yeast

The brewing method for "Yama Sauvignon 2023 Legacy Style" is a traditional style that has been used since the days when there were no destemmers or temperature-controlled tanks.
Fermentation is natural using only natural yeast.
At that time, there was no yeast to cultivate, so fermentation began naturally when the grapes were placed in the tank.
No cultured yeast is used.
2. Punching by foot

*Piegeing is the process of stirring solid matter such as peels and seeds that float on top of the tank during fermentation using a stick or by hand.
For the punching, we used the traditional "foot stamping" method.
Normally, a special stick is used, but by stepping on the grapes with your feet, you can feel the temperature and any hard spots with your skin and thoroughly loosen them, making the punching process gentler on the grapes.
3. No destemming or crushing
*Destemming is the process of removing the grapes from the stems (stalks).
In order to maximize the flavor of Yama Sauvignon, the grapes were brewed without destemming or crushing.
If grape stems are added to the mash, it will have a green, grassy character similar to that of bell peppers. Normally, the stems are removed because they are prone to forming , but for this limited edition brewing, we " deliberately did not make it too clean," and fermented the fruit and stems together to maximize the aroma and flavor of the wild grapes.

By using what may seem like an outdated method of brewing, we are able to express the flavor of Yama Sauvignon. This wine captures the "original flavor of the grapes" with almost no processing. Please give it a try.

It has a neutral positioning, with a "modest sweetness (hard to detect)." It has almost no sweetness in terms of sugar content, giving it a refreshing impression.
Dry :
This wine has a drier impression . Rather than being "dry," it has a nuance of being " crisp " or " clean in the mouth ." After drinking it, you may feel a refreshing, light dryness in your mouth.
The "body" of a wine refers to the strength, weight, and satisfying taste of the wine . It also includes what sommeliers call the "texture," or the " feel " when you put it in your mouth.
Light Body:
It's light and easy to drink.
Full Body:
